Slow Cooker Turkey & Cranberry Stew
The Slow Cooker Turkey & Cranberry Stew is the perfect Boxing Day recipe for using up your Christmas Day leftovers! Made in the Morphy Richards slow cooker, this recipe takes all your leftover turkey and cranberry sauce and transforms them into a hearty, comforting stew with minimal effort. Ingredients:
- Leftover turkey (shredded)
- Leftover vegetables (carrots, parsnips, Brussels sprouts, etc.)
- 1 cup leftover gravy
- 1 cup leftover cranberry sauce
- 1 can of chopped tomatoes
- 1 onion (diced)
- 2 garlic cloves (minced)
- 1-2 cups chicken or turkey stock (adjust based on desired consistency)
- Salt and pepper to taste
- Fresh thyme or rosemary (optional)
Method:
Step 1: In your slow cooker, add the shredded leftover turkey, leftover vegetables, and diced onion. Stir in the garlic, chopped tomatoes, leftover gravy, and cranberry sauce.
Step 2: Pour in the chicken or turkey stock, then season with salt and pepper to taste. Stir everything together until well combined.
Step 3: Set the slow cooker on low for 4-6 hours or on high for 2-3 hours, until everything is heated through and the flavours have melded together.
Step 4: Taste the stew and adjust seasoning if needed. Serve with crusty bread or a side of mashed potatoes for a hearty Boxing Day meal.
