Halloumi Fried Rice

This Halloumi Fried Rice is colourful, quick, and packed with texture—ideal for using up leftovers or making a fresh and exciting side dish. With the help of the Morphy Richards Multi Cooker, you can cook the rice, sauté the halloumi until crisp, and mix everything together with no need for extra pans or hassle.

The nutty, spicy, and fruity mix of chilli, cranberries, and herbs gives this dish its edge, while the halloumi adds a satisfying chewiness that holds its own next to the bold flavours. It’s vegetarian, full of protein, and perfect to serve straight from the bowl at the table.

Ingredients:

  • 400g white rice
  • 250g halloumi cheese, diced into 1cm cubes
  • 2 tbsp olive oil 1 red chilli, chopped
  • 100g mixed nuts
  • 2 tbsp chopped coriander stalks
  • 50g dried cranberries
  • 100g frozen peas
  • Juice of 1 lemon
  • 2 tbsp chopped fresh coriander and mint

Method:

  1. Use the rice function to cook the rice with water in the multi cooker.

  2. Remove the rice and set aside. Wipe the bowl and select the fry setting.

  3. Heat the olive oil, then fry the halloumi until golden.

  4. Add chopped chilli, nuts, and coriander stalks. Stir for a minute.

  5. Add cranberries and peas, then return the rice to the cooker.

  6. Season with salt and pepper, stir through the lemon juice and herbs.

  7. Serve directly from the cooker bowl.
